Other Details
Our vineyards are located at altitudes varying from 450 to 600 m above sea level. The Sangiovese grapes are usually harvested in the second half of October while the Merlot is picked at the end of September. The two types of grapes undergo fermentation separately in stainless steel tanks at controlled temperatures (less than 26°C).
This Sangiovese is then put into Slovenian and French oak casks, while the Merlot is put in barrels of second hand. Here the malolactic fermentation takes place and it is where the young wine stays for the aging. Its important to note that wines we age for much longer (at least 24 months) than it is advised by the Consortium of Chianti Classico, where the law states that Chianti Classico must be aged for at least 18 months.
