Chianti Classico Riserva DOCG Gallo Nero
We produced this wine from a selection of the best Sangiovese grapes that it comes predominantly from the oldest vineyards. The elevated locations of the vineyards(around 450 m up to 600 m above the level of the sea) and the important excursion in terms of temperature between night and day gives to this wine particular bouquet.
It is important to mention that Sangiovese Grapes are collected from the top of each vines lines, where the grapes are the most suffering ones. We usually take the grapes for the Chianti Classico in the middle part of the hill and for our Rosè di Montemaggio we usually take the grapes at the very bottom.
We try always to wait for the last possible moment in October for the grapes to reach optimum level of maturity in order to obtain the perfect Chianti Classico Riserva di Montemaggio in the future.

This Sangiovese grapes are harvested in the second half of October and the Merlot at the end of September. We follow always a careful selection of the best grapes (that are left on the plant for longer in order to achieve the perfect maturation) fermentation lasts for quite a long time and takes place at controlled temperature (which is less than 26°C) in conical wooden trunk vats. Malolactic fermentation usually takes place in stainless steel and wooden vats. After that for few months, maturation takes place in large barrels and in tonneaux (5 Hl). Current vintage is 2013, which is perfect to be enjoyed right now.
